The menu is crafted as a culinary journey where forest and sea intertwine with the playful spirit of modern gastronomy. Each dish tells a story — at times earthy and wild, at times carrying the breeze of the sea, at times sweetly nostalgic. Balance lies in contrasts: smoky and fresh, luxurious and homely, delicate and bold. At the heart of every dish are carefully selected ingredients whose natural flavors are elevated by unexpected details — grapefruit pearls, black garlic aioli, champagne sauce, herb oil. Meat dishes merge untamed depth with refined elegance, vegetarian creations surprise with their richness, and seafood brings the restless energy of the sea to the plate. Desserts are both light and indulgent, playing with textures and flavor pairings that unite the classic with the unexpected.
The inspiration was born from contrasts: from the smokiness of deep forests and the freshness of spring, from Mediterranean sunshine and Nordic restraint, from the sweet memories of childhood and the refined luxury of adulthood. It is a tribute to nature’s diversity — from the tenderness of duck to the wildness of venison, from the earthiness of beetroot to the fiery tropics of mango.
